Sweet Sunday – The Healthy Dessert

We all love a cheeky treat at the weekend, but now with a little help from your friends at mio, that extra bite will be guilt free!

Each Sunday we will be sending you our favourite weekly dessert recipes, all of which are healthy! Spend time with those you love and bake up a storm in the kitchen, you’ll all be fighting over who gets to lick the bowl!

Take one look at these healthy, dark chocolate, oatmeal cookie and your mouth will be watering – ours already is! These scrumptious cookies literally ooze deliciousness and they are making us melt in our seats! Perfectly moist and gorgeously crumbly, the simple instructions and ingredients enables any cook that is able to turn the oven on, to make them!

Oatmeal and dark chocolate are a winning formula in any healthy dessert. So what are you waiting for? Get the apron on, preheat your oven 350 degrees and in 30 minutes you’ll have these bites of heaven in your mouth.

Grab your ingredients!

2 ½ cups of oats

1 cup of all-purpose flour

¼ cup of brown sugar

1 teaspoon of baking soda

½ teaspoon salt

1 cup of coconut oil

2 eggs

1 tablespoon of vanilla

8 ounces of dark chocolate, chopped into chunks (about 1 ½ cups)

Instructions

Preheat your oven to 350 degrees and grease a baking tray and line with greaseproof paper.

Now it’s time to get dirty… Grab a large mixing bowl and get stuck in! Add oatmeal, flour, baking soda, melted coconut oil, brown sugar, vanilla, eggs, and salt then mix until combined and the dough holds its shape. Then add half of your chunky chunks of dark chocolate and mix once again.

Spread half of your mixture into your grease proofed baking tray, ensuring that it is even. Then take the second half of your dark chocolate and sprinkle it over the mixture. After this, pop the rest of your dough in the tray and over your chocolate! The messier it looks, the tastier it will most likely be.

Wait patiently (we know it’s hard) for 20-25 minutes making sure you don’t over bake your healthy dessert! Allow bars to cool, but not for too long, and enjoy to your hearts content!
