The Pumpkin Smoothie

Now that Autumn is upon us, PSL (Pumpkin Spice Latte) season is officially here! While we love cozying up with this comforting drink, it’s not always the healthiest choice (the culprit? Loads of sugar and artificial ingredients).

But don’t fret! You can still enjoy a healthy version of this seasonal favorite. In fact, pumpkins are a super food in their own right. They’re rich in carotenoids, including the anti-oxidant beta-carotene, which gives them their orange color. Your body converts beta-carotene into Vitamin A, which protects your eyes, and has also been linked to cancer prevention.

Pumpkins are also fantastic for your skin – they’re full of vitamins A, C, and E, and enzymes that keep skin healthy and clear. Carotenoids fight free radicals, which prevent wrinkles and signs of age to keep skin smooth, hydrated and plump.

We’ve scoured the Internet for the healthiest iteration of the famed PSL, and landed on this absolutely yummy (and Paleo!) Pumpkin Smoothie from Pale OMG.

You might even consider this treat post-workout: pumpkins are chock full of potassium (even more than bananas!), which the body needs to rebalance electrolytes and keep muscles in top shape after a brutal sweat session.

You’ll need:

½ cup coconut milk

½ cup water

½ cup pumpkin puree

1-2 cups ice cubes

3 dates, pitted and soaked in water for at least 20 minutes

1 teaspoon vanilla extract

1 teaspoon cinnamon

¼ teaspoon nutmeg

pinch of cloves

Directions

  1. Soakdates in water for at least 20 minutes
  2. Remove dates, and add all ingredients to food processor or blender
  3. Blend until smooth and silk.
  4. With another person. And with a straw.
